Pecan wood chips smokes a light sweet and fruity flavor that works great with pork, sausage and even plant based beyond beef. Pecan wood is stronger than most fruit wood, but milder than hickory and mesquite. Pecan is ideal for slow cookers and infuses a wonderful flavor to any cut of meat. We then use it to smoke Home Made pork/beef sausage with fennel and coriander (bratwurst style) or you can order it with plant based beyond beef sausages. We smother it with multi color peppers and onions slow cooked in a tomato based sauce. These delicious sausage can be served on bread or with rice, quinoa or even Spaghetti and/or a side salad.

Instructions:
Thaw main freezer meals overnight in refrigerator or in the morning in cold water.
Thaw the wood chips that are wrapped in tinfoil.
Place the tinfoil wood chip package on the bottom of the crock pot / slow cooker pot / Insta pot. Make sure the tinfoil is placed so the holes are on the top to release the smoke.
Open the freezer bag and remove the meal tinfoil sleeve or tin foil pan.
Open the tin foil pouch or remove the lid exposing the meal.
Place in the crock pot / pot on top of the wood chips and mold pan or tin foil to match crock pot design. (Side Note: If wrapped in tin foil pouch then expand the sides of the tinfoil up the side walls of the pot, creating a bowl that fits in the pot.)
Leave the tin foil sleeves open and close the lid tightly. You should not have any tinfoil sticking out the sides of the crock pot breaking the seal between the lid and crockpot. It is very important that the lid be closed tightly creating a seal to ensure maximin smokin' ability.

Slow Cooker:
Cook on “low” setting for 5 - 7 hours in a 6-quart crockpot or 8 - 10 hours in a 2-quart crockpot. 1/2 the time for Hi settings

Serving Suggestion: Slice if desired and serve with on bread or with rice, quinoa or even Spaghetti and/or a side salad.
