Lazy, Hazy, Crazy Summer meals are always delicious as they are always cooked with fresh vegetables, organic meats and spices that delight. This Mexican inspired recipe consists of organic free range chicken breast (that can be shredded)/pork or beef, marinated in orange juice, coconut milk and achiote, then mildly spiced with cumin, oregano and cilantro to bring this meal to the next level. It comes with rice or Quinoa. You can also serve it with tortillas, a salad and/or avocado's and salsa. Simply delicious.

Instructions:

Thaw main freezer meals overnight in refrigerator or in the morning in cold water.

Slow Cooker:

Cook on “low” setting for 2 - 4 hours in a 6-quart crockpot or 3 - 5 hours in a 2-quart crockpot.

Cook Rice:
Add contents to stove top pot.
Add water (3/8 cup per serving)
Cover and bring to the boil
Turn down to low and simmer for 14 mins for Al Dente, 15 mins for normal, 16 mins for soft
Remove and let stand for 5 min, fluff and salt and pepper to taste.

Serving Suggestion: Serve with tortillas, a salad and/or avocado's and salsa.
