Product Details

Although Nasi Lemak is the National Dish of Malaysia and not conducive for slow cooker, we still wanted to visit Malaysia so we chose to explore their "National Flavor" rather and chose "Peanut Curry." We put together a Malaysian Peanut Chicken Curry with yummy sweet potatoes. Serve this with sweet coconut sticky rice and it is just so perfect and delicious.

Instructions:

Thaw main freezer meal overnight in refrigerator or in the morning in cold water.
Add the contents of freezer bag to crockpot.
Add water according to number of servings. (1/4 cup per serving for this meal)
Make sure the crockpot is more than 1/2 full - otherwise it will cook hot and you will need to reduce times

Slow Cooker:
Cook on “low” setting for 2- 3 hours in a 6-quart crockpot or 3-4 hours in a 2-quart crockpot. (make sure your slow cooker is between a half to three quarters filled, any less the sauce will burn and any more the meal may not cook in time)

Pressure Cooker (Insta Pot/Ninja Foodie:

Pressure cook mixture for 4 - 5 mins thawed out, 6-8 mins if from frozen
Release pressure and add rice noodles
Replace lid and use keep warm function for 5 mins or noodles are tender.

Serving Suggestion: Serve with sweet coconut sticky rice, wedges of limes, ground peanuts, bean sprouts and/or fresh cilantro and/or a green salad.
