Lazy, Hazy, Crazy Summer meals are always delicious as they are always cooked with fresh vegetables, organic meats and spices that delight. This Southwestern inspired recipe consists of organic free range chicken breast (that can be shredded), fire roasted tomatoes, green chilies, sweet yellow corn, Mexican black beans and fresh cubed zucchini. We then mildly spice it with cumin, smoked paprika and roasted chili to balance this meal. You can serve it on top of lettuce garnished with avocado or on top of rice. Simply delicious.

This amazing meal is best served on a salad or can be served with rice or quinoa.

Instructions:

Thaw main freezer meals overnight in refrigerator or in the morning in cold water.
Add a 1/4 cup of water

Slow Cooker:

Cook on “low” setting for 3 - 5 hours in a 6-quart crockpot or 5 - 8 hours in a 2-quart crockpot.

Serving Suggestion: Serve with lettuce and garnish with avocado and or rice, quinoa.
