The resulting process of desiccation creates a greater concentration of beef flavor and taste. We use Premium USDA Choice Top Sirloin Center Cut Steak is an excellent steak for grilling or roasting while being lean and well flavored. Perfect as an entree or cut into kabobs, this delicious steak provides a great value to any menu. We dry age for either 15 days, 30 days or 45 days.

USDA Choice is a cut above USDA Select, which is commonly found in your grocery store. USDA Choice is a quality steak that is lean, has a slightly more course texture and minimal fat marbling.
